MF Cauliflower Pizza

Ingredients
1 tsp Garlic Powder1 tsp Basil leaves1 cup grated raw cauliflower1/4 cup eggbeaters1/2 cup shredded Mexican 2% cheese1/4 cup + 2 TBL shredded 2% mozzarella cheese1/4 cup Walden Farms Basil Tomato sauce
Directions
Preheat oven to 425. In a large bowl, combine eggbeaters, grated raw cauliflower, garlic powder, basil leaves and the 1/2 cup shredded mexican cheese. Mix well. Place a piece of parchment paper on a large cookie sheet. With a well-PAM-sprayed back of a large spoon, mound the cauliflower mixture into two mounds and spread out in pizza shapes on the cookie sheet. As thin as possible without gaps showing through. Bake at 425 for 10 minutes, then carefully flip over with a pancake turner and bake 5 minutes more, until golden brown and crispy. The edges may burn but they won't 'taste' burnt so it's OK. Watch carefully! When done, alalow to cool then freeze in a large ziploc bag. When ready to serve, top with the 1/4 cup WF basil tomato sauce and the 1/4 cup +2 TBLs mozzarella cheese (remember to use HALF the sauce and the mozzarella if you're only eating 1 pizza for 1 lean and 1-1/3 greens). Bake or boil just until cheese melts, and enjoy!
