Rice with Veggies and Pork

1 - 12 oz can carrots1 - 6 oz can sweet corn2 cups long cook rice4 cups water1/8 cup sweet chili sauce4 oz diced pork1 tbsp cooking oil
Prepare rice by placing 4 cups of water into a 2 quart sauce pan and bring to boil, add rice and cook for 20 minutes, stir gently several times to prevent sticking and burning, (or use rice cooker.)
While rice is cooking sauté diced pork in 1 tbsp cooking oil until browned and cooked through approximately 5 min, make sure the pork is properly cooked for safety. Open the cans of vegetables, add to the pork, and use ¼ cup of the liquid to deglaze the pork. Discard remaining liquid properly. Warm the meat & vegetable mixture until hot.
When all ingredients are cooked, combine the rice and meat mixture, add the sweet chili sauce and stir gently to combine. Serve hot.
Serving Size: 6 - 1 cup portions
