Low Carb Cheesecake

Ingredients
2 1/2 bricks cream cheese or low fat cream cheese1/2 cup cream or half and half (cream rec for Atkins)1/4 cup sour cream3 eggs1 tsp vanilla extract1 tsp grated lemon rind and 1 tsp lemon juice12 packets of splendaOptional Toppings:1/2 cup cream whipped with 2 packets splendafruit: Blueberries, raspberries, strawberries or kiwi
Directions
Preheat oven to 325
Cream cream cheese, sour cream, cream, flavorings, eggs, and splenda and mix 1 minute.
Pour into paper cupcake liners in a cup cake pan
Bake 20 -25 minutes test with toothpick in center
Cool 1 -2 hours in refrigerator
Top with blue berries, raspeberries or sliced strawberries, whipped cream, or eat plain
