Tofu Fried Rice

1/4 cup soy sauce2 tablespoons ketchup2 tablespoons rice vinegar2 teaspoons toasted sesame oil1 tablespoon canola oil1 cup chopped onion1 cup chopped carrots4 garlic cloves, minced4 ounces white mushrooms, chopped1 teaspoon grated fresh ginger8 ounces firm tofu, drained and crumbled3 cups cold cooked rice1 cup frozen peas, thawedSalt and black pepper
In a small bowl, combine the soy sauce, ketchup, vinegar and sesame oil and set aside.
In a large skillet, heat the canola oil over medium heat. Add the onion and carrot, and cook until softened, about 5 minutes. Stir in the garlic, mushrooms and ginger. Add the tofu and cook, stirring, 4-5 minutes. Add the soy sauce mixture and stir to coat.
Add the rice and peas. Stir-fry until well mixed and heated through. Season to taste with salt and pepper.
Serving Size: Makes 4 generous servings
