4 Tbsp butter1/4 cup flour1 tsp salt1/2 tsp dry mustard1/4 tsp pepper2 cups 2% milk cheddar cheese, shredded1 cup 2% milk mozzarella cheese, shredded8 oz 2% milk Velveeta cheese1 (16oz) box of macaroni (elbow or med. shells)Paprika (optional)
1. Preheat oven to 375 F
2. Cook Pasta as usual
3. In a large saucepan, melt butter over low heat
4. Stir in flour, salt, mustard, and pepper until smooth; take off heat.
5. Gradually stir in milk until smooth
6. Stir constantly for 10 minutes over heat until mixture thickens; remove from heat
7. Stir in 1 1/2 cups cheddar cheese and all of Velveeta and Mozzarella cheeses.
8. Put cooked macaroni in a greased 13" x 9" casserole dish and pour cheese mixture over; mix well.
9. Sprinkle paprika (optional) and remaining cheddar cheese on top.
10. Bake at 375 F for 20-25 min or until cheese on top is lightly golden.
Serving Size: Makes 8 1-cup servings
