Banana oat pancakes

Ingredients
2 large eggs1 large banana1/2 C quick oatscoconut oil for frying
Directions
mash large banana in bowl, add 2 eggs and beat.
Add 1/2 C oats and mix to create a batter.

use 1/4 cup for each pancake, fry on hot griddle in coconut oil, flip over when brown on bottom.

Serving Size: makes 2 servings, 2 pancakes each
