Wilted Spinach with Roasted Garlic and Feta

Ingredients
6 cups fresh spinach5 cloves garlic (roasted)1 tbsp olive oil2 ounces fetaFresh cracked pepper
Directions
Preheat oven to 400º

Roast garlic in skins (using a foil package) with 1/2 of the olive oil and fresh cracked pepper for 20-25 minutes.

Heat remaining olive oil in a saute pan over medium high heat. Wilt spinach with the oil, about 4-5 minutes. Squeeze garlic from the paper skins and toss with the spinach.

Remove from the pan and add feta, tossing to combine. Serve immediately.
