Brunch Egg Casserole

Ingredients
1 dozen eggs (or egg beaters to lower calories)2/3 cup 95% lean ham cubed1 small can mushrooms1 cup grated cheddar cheese 8 oz. fat free sour creamParsley to taste or up to a cupSalt to taste or up to a tbsp
Directions
Scramble eggs with chopped parsley and salt until nearly done. Fold in sour cream. In a casserole dish, layer scrambled egg mixture, half of cubed ham, half of mushrooms, another layer of egg, ham and mushrooms. Top with grated cheese. Bake at 325 degrees for 30minutes or until warm. Recipe can be made the day before and refrigerated before baking.
