Quinoa Casserol

Ingredients
-1.5 cups Quinoa dry-2 cans Black Beans-one container fresh spinach- can use frozen-if thawed1 tablespoon butterone 8oz package of 50% light cheddarSeasonings of your choosing (we used adobo and garlic salt and pepper)
Directions
Preheat oven to 400

Prepare 1.5 dry cups of quinoa according to package directions (1:2 ratio w/ water)

Sautee spinach in .5 of the tablespoon of butter

Mix cooked quinoa, spinich, rinsed black beans, and 1/2 the package of cheese.

Add seasoning to taste (we used adobo and garlic salt)

greese casserol dish with other half of tablespoon of butter

Place in large casserol dish and spread the rest of the cheese on top.

Bake for 20 or so minutes

Allow to cool for at least 5 minutes before serving.

Makes about 12 3by3 square portions

    Great to have a Quinoa recipe. This is great except I think the portions are a bit small.
    Using a small amount of stronger tasting cheese (Parmesan) might reduce the calories. Will try that. - 3/1/08
