Huevos Rancheros, without the tortilla

Ingredients
1 red pepper, finely chopped1 small onion, finely chopped4 whole eggs, 3 egg whites1 TBL olive oil0.25 C salsa0.25 C shredded cheddar 1 tsp tabasco or hot sauceoptional: corn tortillas (not included in the calories in this recipe)
Directions
Preheat medium pan with olive oil and cook onions and red peppers until soft. Whisk eggs with salt and pepper and add 1 tsp of hot sauce. Scramble with peppers and onions, leaving them slightly wet. If desired, serve over corn tortilla. Add cheese and salsa on top.
