Kelly's Halibut Olympia

Ingredients
2lbs halibut 1/2c sour cream 1/2c mayojuice from one lemon1/8t white pepper1 1/2 t Pampered Chef Dill blendsalt and pepper2T butter2 garlic cloves minced1/2 onion sliced3 cups packed baby spinach leaves
Directions
Rinse and dry Halibut and place in a lightly greased casserole dish, sprinkle with salt and pepper. Mix sour cream, mayo, juice from lemon, 1/8t white pepper and dill seasoning together and set aside. Carmelize sliced onion in 2T butter and add minced garlic just at the end. Pour this mixture over the Halibut and then cover with spinach leaves. Pour sour cream mixture over everything. Cover with foil and bake @350F for about 35 minutes until fish is done and spinach has wilted.
