Knephla Soup

3 cups potatoes, diced1/2 cup onion, diced1/2 cup celery diced5 cups water1 tsp salt1 stick margarine3/8 cup flour1 can evaporated milk (12 oz)4 cups water1 tbls chicken bullion3/4 tsp salt1 large egg1 tbls oil1/4 cup water1 cup flour1/2 tsp salt
Makes 10 Servings
Other ingredients such as carrots, garlic and mushrooms may be added.
Cook first 5 ingredients until potatoes are done. In a separate kettle, melt margarine, stir in flour; remove from heat. Stir in milk, water, chicken seasoning, and salt. Return to heat; cook over medium heat stirring constantly until it is thickened. Stir into cooked potato mixture. Mix dough for knephlas: mix water, oil, egg and salt; stir in flour. Drop by small spoonfulls into hot soup; cook a few more minutes. Knephlas will float when done.
