1 lb. chicken breasts, skinless6 oz. soft goat cheese1/2 c. grated parmesan cheese6 oz. sundried tomato pesto1 tbsp. dried basil
preheat oven to 350. place chicken breasts between waxed paper and pound with meat mallet until approx. 1/4" thick. Mix pesto, basil and goat cheese together. Place 1/4 of the mixture onto each flattened breast and roll up, securing with toothpicks. Place in casserole dish sprayed with nonstick spray. Bake approx. 40 mins. During the last 10 mins, sprinkle with grated parmesan cheese.
