Omelette: Spinach, Bacon, and Goat Cheese

1 egg1 egg whitesmall handful of fresh spinach0.5 tsp fresh minced garlic1 tbsp fresh chopped bell pepper (you favorite color)2 slices bacon0.5 oz soft goat cheesesriracha chili paste to tastesalt and pepper to taste
fry bacon keeping a small amount of the grease in the pan for use.
beat eggs. stir in salt, pepper, hot sauce, and cheese.
in bacon grease, saute bell pepper and garlic. when slightly soft, add spinach and saute until just beginning to wilt.
pour eggs into pan over veggie mixture. crumble bacon over top. and cook until soft set, pulling back edges to release uncooked center. when soft set, flip.
it will spend very little time cooking on this side.
serve immediately.
