1 pound ground turkey (93% fat)1 large red bell pepper, chopped1 medium red onion, chopped6 cloves garlic, chopped1 tablespoon chili powder2 teaspoons cumin1/4 teaspoon cayenne pepper (optional)1 16 oz. can green chili enchilada sauce1 15 oz. can kidney beans (no salt added)1 15 oz. can diced tomatoes (low sodium)water (if needed)salt/pepper to taste
Chop red bell pepper and onion. Cook turkey with red bell pepper and onion, until the turkey is cooked. Stir in the garlic, chili powder, cumin, and cayenne pepper with the meat, red bell pepper, and onion. Stir in tomatoes, kidney beans, and enchilada sauce. Bring to a simmer. Reduce heat to low. cover and cook until all vegetables are tender (about 10 minutes.)
