Chopped Avocado Salad (WLC Approved & Paleo)

Ingredients

1 Whole Avocado1/2 cup onion (any kind)1/2 cup green pepper (cubanelle or bell)12 grape tomatos (approx 6 oz or half cup)2 limes1 cup Baby Spinach1 cup Raddicchio1 oz Coconut Milk (Goya or any brand that does not contain guar gum)garlic powder (just a dash or 1/8th tsp)black pepper (just a dash or 1/8th tsp)
Chop Onions first and Place in a bowl with freshly squeezed lime (use one- save the other for later)
While that sits in the bowl, chop the pepper and dice the tomatoes
Add Peppers and tomatoes to onion and mix
Shred or chop baby spinach and radicchio and combine to veggies and mix
Cut open Avocado and dice it- Combine with the salad and squeeze the remaining lime and mix together
Add a splash of the coconut milk
add a dash of black pepper and a dash of garlic powder and voila!
