Decadent vegan chocolate pudding (Adapted from Starch Solution)

3/4 cup granulated sugar (I use turbinado)1/2 cup unsweetened cocoa powder3 cups unsweetened almond milk11/2 tsp vanilla
Mix sugar, cornstarch, almond milk, and cocoa in a medium pan. Bring to a boil and reduce heat. Stir and continue to cook until pudding thickens. Remove from heat and stir in vanilla. Put into four dessert bowls and refrigerate for at least two hours.
