SCD Lemon Blueberry Bars

Bottom Layer:1 1/2 cups Almond Flour, Bob's Red Mill 1 tsp sea salt 2 tbls Nutiva Organic Extra Virgin Coconut Oil, melted1 1/2 tbls HoneyFilling: 3 tbsp Honey, 3 tbsp 3/4 cup Egg Beaters 1/4 cup melted Butter 1/2 cup Lemon Juice 3/4 cup Dried Wild Blueberries, Trader Joe
1. Lightly oil an 8 x 8" baking dish.
2. Combine all the bottom layer ingredients in a medium bowl. Mix until everthing is combined. It should be crumbly.
3. Press dough evenly into bottom of baking dish.
4. Bake for 15 minutes until firm and slightly golden.
5. Combine all the fill ingredients and beat on high speed until smooth.
6. Pour mixture over baked crust.
7. Sprinkle evenly with blueberries.
8. Bake 20 - 25 minutes or until set.
Cool then refridgerate until set. At least 2 hours.
Serving Size: Makes 12 bars.
