Vern's "Free Veg" Chicken Soup

1 Whole raw Chicken, Skin removedChopped Celery 3 stalks3 x Chopped and Minced Chili's1 Tin Chopped Canned Tomato's3 x Carrots grated1 x Onion mincedChicken StockRed Peppers, choppedLemon JuiceSalt and Pepper4 large Courgettes, choppedI added some Jalapeņo Pepper Sauce, Italian Herbs and Dill to flavour.
Put all ingredients into big pot, bring to boil. Let simmer until chicken is tender then remove Bones. I left Bones in for more flavour. When all veggies are cooked season to taste and blend half the pot with an immersion blender. Makes it very creamy but still leaves texture.
Serving Size: Makes 8 large Soup Bowls and some for freezing
