Veggie Lasagna

Ingredients
16 Delallo no boil lasagna noodles1 23.25 oz jar Prego light smart tomato sauce1 16 oz container Calabro fat free ricotta cheese3 tbsp egg white1 16 oz bag 365 (Whole Foods) Mozzarella2 large red bell peppers, diced1 cup cooked spinach1/2 tbsp olive oil
Directions
Combine egg white with ricotta cheese. Spoon 1/3 of the tomato sauce on the bottom of a 13 x 9 casserole dish. Place 4 noodles on top of the sauce of the dish. Spoon 1/3 of the ricotta mixture over the noodles. Sprinkle 1/4 of the mozzarella over the ricotta. Spread the spinach over the mozzarella. Place 4 noodles on top of the spinach. Repeat the layers two more times with the diced red pepper in place of the spinach ending with noodles on top. Spread the remaining sauce on top of the noodles followed by the last 1/4 cup of mozzarella.

Bake 20 minutes at 350 degrees.
