Ingredients
Directions
1/3 cup melted coconut oil1/4 cup sugar1/4 cup Stevia in the Raw1 large egg1 1/2 cup whole wheat pastry flour1 1/2 tsp baking powder1/2 tsp salt1/2 tsp vanilla1/2 cup almond milk (unsweetened)Topping:1/4 cup sugar2 tbsp melted coconut oil1 tbsp cinnamon
Wisk together the whole wheat pastry flour, sugar, stevia, baking powder, and salt. Combine the room temperature almond milk, egg, coconut oil and vanilla. Pour the wet ingredients into the dry ingredients and mix just to combine - do NOT overmix as it will impact the texture of the muffin. Using a medium ice cream scoop, evenly distribute the batter into 10 well-greased muffin tins. Bake for 15 - 20 minutes in a 350 degree oven or until the muffins are lightly browned around the edges.
For the topping: combine the cinnamon and sugar. Melt the coconut oil. With a pastry brush, lightly brush a warm muffin with coconut oil and then roll it in the cinnamon sugar mixture. Continue until all the muffins are coated.
