Extra Vegetable Beef Stew

2 TBS olive oil0.5 medium onion sliced4 tsp crushed garlic1.25 pounds lean rump roast cleaned and diced0.5 cups flour2 tsp black pepper1.5 TBSP salt5 medium potatoes peeled and diced12 small mushrooms sliced or diced1.5 cups carrots sliced an inch lond and cut in half width wise2 cans italian style diced tomatoes2 cups water
Heat 1 TBS Olive oil over medium heat. Add sliced onion. In a bowl, combine flour, salt and pepper. Coat beef in flour and add to pan once onions are tender. Add 1TBS more of olive oil as well as garlic. Cook until beef is browned on the outside, but do not cook through.
Add meat mixture and remaining ingredients in crock pot. Cook on low heat for 4+ hours
