Mock Baked Apple

Ingredients
1 large apple of any type1 tbs honey1/2 tsp vanilla extract1 tsp ground cinnamon
Directions
1. Core and peel apple. Slice into 8 equal portions.

2. Arrange apple slices on microwave-safe plate. Drizzle with honey and vanilla and sprinkle with cinnamon.

3. Microwave on high 4-6 minutes, until apple is soft and juice runs from it.

2 servings of 4 apple slices each. For variation consider adding raisins, chopped nuts, or fat-free whipped cream.

    I love baked apples and this hit the spot! I might try it with some raisins for a little added tartness and/or maybe some heart healthy walnuts. Just a sprinkle though! It is great all by itself though... - 8/14/09
