Ingredients
4 eggs4 corn tortilla2 T. sour cream2 T. canola oil2T. unsalted buttersaltpepper
Directions
Heat oil and butter in a pan. Cut up tortillas into 2 inch pieces, add to pan and fry 8 minutes. Whisk eggs, sour cream, and salt. Add to pan. Scramble with spatula. Cook until eggs are at desired consistency.
