Healthier Buffalo Chicken Bites

16 oz. shredded cooked chicken1/3 cup favorite hot sauce ( I used Franks)3 1/2 oz. Greek Yogurt Cream Cheese, softened1/2 cup shredded sharp cheddar cheese1/2 cup reduced fat mozarella cheese1/4 cup green onions, chopped1 egg white, beaten well1.25 cups Corn Flakes cereal, finely crushed1 tsp garlic powdersalt/pepper to season per your taste
Preheat oven to 350 degrees F. In a large bowl, combine shredded chicken, hot sauce and cream cheese; mix well. Stir in cheeses and green onions mix well until all combined. Using 3 separate bowls, set out the flour, eggs and crushed cereal. Scoop out chicken mixture and make 2-inch bites, first rolling in flour, then dipping in egg and last coating with cereal. Repeat this until you have about 11 balls. Spray tops lightly with non stick spray and place on a foil lined cookie sheet, topped with bakers cooling rack to crisp up bottom of bites. Spray bakers cooling rack before placing balls on them.
Place balls on sheet and bake for 25 to 30 minutes, until golden. Serve with blue cheese or ranch dressing.
