Cinnamon Chili Pork with Apple Salsa

For the ribs:3 T. olive oil3 t. minced garlic1 T. chili powder1/2 T. cinnamon24 oz. boneless pork ribsFor the salsa:2 apples, chopped1/2 c. red bell pepper, chopped1/4 c. shallots, chopped1/3 c. lime juice1 T. honey1 T. dried cilantro1/4 t. pink himalayan salt1/4 t. ground black pepper
Mix olive oil, chili powder, cinnamon, and garlic in shallow dish, and add pork. Toss to coat well. Refrigerate for 30 minutes to marinate.
Preheat oven at 400F. Lightly spray a baking dish with Pam.
While pork is marinating, prepare apple salsa. Chop apples, red bell pepper, and shallots. Toss in a bowl with lime juice, cilantro, honey, salt, and pepper. Seal off with a lid and refrigerate till ready to use.
After marinated, put pork in baking dish and bake for 30 minutes.
Once cooked through, serve on a plate and top with apple salsa.
Serving Size: makes 8 3 oz. portions of pork topped with salsa
