Ingredients
Directions
Approx 6 cups fresh broccoli florets2-3 cups low-cal chicken broth (my favorite is Pacific Foods Free Range Organic, only 10 cals per cup)
This isn't a strict recipe, so feel free to use more or less of anything, or add your own favorites! A little bit of half & half makes it creamier if you desire.
In a medium to large pot, cook broccoli in chicken broth over medium heat until really tender.
Let cool for 10 minutes or so. Keeping the broth to use later, use a slotted spoon to transfer broccoli into a food processor or blender. Add about half of the broth and process until pureed. Add more broth to your liking so it has the consistency you prefer. I like it fairly runny, or to be honest it can feel a little baby food-ish when too thick LOL.
Seriously, if you're on the fence on this one and are a broccoli lover, please give it a shot! :D
Serving size is about a cup, but as low-cal & nutritious as this is, a little more certainly isn't going to hurt a bit.
