1 tbsp vegetable oil1/2 onion, diced3 clove garlic, minced3 green onions, diced1 tsp cumin1 - 1/2 cup diced fresh mushrooms1 15 ounce can pinto beans (about 2.5 cups)1/4 cup cilantrosalt and pepper to taste
Saute onions and garlic in oil till clear. Add mushrooms, green onions, cumin and saute till very soft. Drain & mash pinto beans. Add to mushroom mixture, season to taste with salt & pepper. shape into burgers and bake 20-30 minutes.
