Orange Chicken with Asparagus

1 Tablespoon sesame oil4 oz/125 g skinless chicken thighs or breast2 minced/chopped garlic cloves1/4 teaspoon red pepper flakes (optional)2 cups chopped fresh asparagus1 teaspoon reduced-sodium soy sauce1 teaspoon honey1 teaspoon sesame seedsjuice and zest of 1 orange
Heat 1 tablespoon sesame oil in a large skillet over medium heat. Saute 4 oz chicken, sliced into 1/2-inch strips; 2 minced garlic and 1/4 teaspoon red pepper flakes 5 minutes. Add 2 cups chopped asparagus and cook 5 minutes more.
In a small bowl, whisk together 1 teaspoon reduced-sodium soy sauce, 1 teaspoon honey, 1 teaspoon sesame seeds and juice and zest of 1 orange. Add to skillet and cook 1-2 minutes.
Serve over 1/2 cup cooked brown rice.

I used a chicken thigh. Didn't use the Sesame Oil for the frying (too unstable under heat) but added a touch at the end to flavor the dish. I also didn't have any sesame seed so did without that. Served it over .5 cup Jasmine rice. Overall it was a tasty dish and a large portion. Easily doubled. - 4/13/13
