Hash Brown Breakfast Bake

Potatoes (3 large potatoes shredded, or 3 cups of shredded hash brown potatoes)1/2 cup of chopped green pepper1/2 cup of minced onion or chopped1 large egg or 2 small2 tbsp. of canola oil2 tbsp. of taco bell con quesco cheese
In large skillet add canola oil, shredded potatoes and green pepper and onion. Cook on medium heat stirring with spatula often, til potatoes are browned to your liking, In same skillet push the potato mix to one side and fry your egg or eggs if using small. Scramble the eggs and when whites are done, fold into the potato mix and spread evenly in skillet.
Turn heat to low or simmer and then add Taco Bell Con Quesco Cheese about 2 tablespoons and spread and fold throughout the hash browns, when blended well and cheese well melted, breakfast bake is ready to serve.
