Vegan Spanish Lentils

Ingredients
2 cups dried lentils6 medium tomatoes, diced OR 28 oz. can crushed tomatoes 2 cups carrots, chopped2 large potatoes, diced1 medium onion, diced3-4 cloves garlic, mashed2 bay leaf1 tsp. cumin powder4 C. vegetable broth2 Tbs. olive oil3 Tbs. smoked paprikaSalt and pepper to taste1/8 – 1/4 C. Tapatio hot sauce (optional)
Directions
In deep pot, sauté onion and garlic in oil until it starts to brown. Add remaining ingredients (except salt) and bring to a boil. Reduce to a simmer and cook until lentils are done. Check the cooking time for your particular lentils as some cook much faster than others. Cook time can be anywhere from 30 to 120 minutes on the stove top.

Add salt and pepper to taste.
