Vegan Pumpkin Curry

Ingredients
1 Medium Yellow Onion4 Cloves Garlic2 tbsp Coconut Oil2 C. Pumpkin, cubed and steamed2 C. Broccoli, chopped and steamed2 C. Bell Peppers, sliced and steamed2 Cans Lite Coconut MilkThai Red Curry Paste (Vegan)1 Tbsp. raw sugarsalt (to taste)
Directions
Chop Onion, and mince garlic. Saute in Coconut oil until cooked. Add coconut milk and curry paste, salt, and raw sugar. Simmer until curry paste is blended with other ingredients. Add vegetables and cook until warmed through.

Serve with brown rice.
