Chile Relleno Breakfast Casserole

Ingredients
2 7oz cans of roasted whole green chiles (8 whole)8 wedges of Laughing Cow Light Queso Fresco & Chipotle Cheese3 eggs3 egg white1 T flour
Directions
Preheat oven to 375. Spray a 8X8 or 9X9 baking dish with nonstick spray. Arrange the whole green chiles in one layer in the baking dash. Insert a wedge of cheese into each chile and press down lightly. Beat the eggs and egg white with the flour and pour over the top evenly. Bake for 30-40 minutes until knife comes out clean.

Serving Size: Makes 4 servings-approximately two chiles each
