Slow Cooker Low Carb Beef and Broccoli

2 pounds boneless beef chuck roast, sliced into thin strips1 Beef Bouillon cube (dissolved into 2 cups water)1 cup soy sauce2/3 cup Splenda brown sugar blend2 Tbsp Sesame Oil6 garlic cloves, minced1 tsp Xanthan gumFresh or frozen broccoli florets (as many as desired)
Place beef in crock pot.
In a bowl, combine the beef bouillon, soy sauce, Splenda, sesame oil, and garlic. Pour over beef and cook on low for 6-8 hours.
In a cup, stir 4 Tbsp of sauce from the slow cooker with the xanthan gum until smooth. Add back into slow cooker and stir well.
Add broccoli to the crock pot and stir to combine.
Cover and cook 30 more minutes on high or until broccoli is desired doneness. If sauce does not seem thick enough, add Xanthan gum in very small amounts until desired thickness is reached.

I was just wondering... this recipe has over 600 calories per serving and that is half my daily calorie allotment. How is this a good recipe for those on weight loss or even maintaining?

I am a low carber so that is more important than calorie count on my plan. I have lost 110 pounds to date and I eat 1700-1800 calories per day. It works for me but I know it is not for everyone.
