Zucchini Tuscan Chicken

Ingredients
3 Tbs EVOO1/2 cup sliced onion2 cup sliced zucchini2 cup sliced summer squash1 tsp dried oregano1 tomato sliced or chopped1 lb boneless/skinless chicken breast (or orange ruffie)1/2 cup roped provel or shred. colby jack cheeseServing suggestion: On Brown rice (included in nutrition facts)
Directions
In some olive oil, cook sliced chicken breast. Add EVOO, onion, zucchini, squash, and oregano. Cook 4 minutes stirring often. add tomatoe on top. Sprinkle with salk & pepper. Cover, reduce heat, and simmer 5 minutes. Add Cheese on top, serve when melted on Brown rice.
