Paleo Coffee Creamer

A can of coconut milk2 eggsa spoon full of coconut oil, then melt itVanilla extract to tasteCinnamon (optional) to taste
Put the cocnut milk in a blender, or food processor
Turn it on low-ish
Add the eggs
SLOWLY add the oil
Add vanilla and cinnamon if you want.
Allow everything to blend a min or two then put into a jar and you're done.
Serving Size: Makes about 5 1/4 cup servings
