Shrimp enchilada for one

3 oz Shrimp2 Corn tortilla1/2 cup each Red and Green Bell Peppers, choppedTaco SeasoningShredded light cheddar or Colby Cheese
In a bowl toss raw cleaned, peeled, deveined shrimp with 2 tsp taco seasoning and Peppers to coat. If using large shrimp, I usually cut into smaller pieces.
Coat tortillas in Enchilada sauce and fill each with HALF the shrimp and peppers and a QUARTER of the cheese.
Roll, and cover with remaining sauce and cheese.
Bake in a preheated 375 degree oven for 10 minutes or until cheese and sauce are bubbly.
