Ham Bone Soup

Ingredients
8-16 oz ham, diced1 pkg 16-bean soup mix (without flavor packet)1 can diced tomatoes1/2 C baby carrots, diced1 medium onion, diced2 C homemade ham stock
Directions
In large pot, prepare beans as directed.

After beans have been soaked and rinsed, add ham stock and water to cover beans. Bring to boil and simmer for about an hour. (Watch the liquid level!)

Add ham, carrots, onion and canned tomatoes. Add more water if necessary. Simmer for another 30-60 minutes.
