Carrot Cake Muffins

Ingredients
3 cups finely ground almond meal/flour 2 tsp sea salt 1 tsp baking soda 1 tbls cinnamon 1 tsp nutmeg1¼ cup egg beaters ½ cup honey ¼ cup coconut oil 3 cups carrots, grated 2 medium apples, grated ½ cup crushed pineapple, very well drained 1 cup raisins 1 cup pecans, chopped
Directions
In a large bowl, combine almond flour, salt, baking soda, cinnamon and nutmeg. In a separate bowl, mix together eggs, agave and oil. Stir remaining ingredients into wet ingredients. Stir together wet and dry ingredients. Pour into greased muffin tins or paper lined muffin tins.
Bake at 325° for 35 minutes
