Kale Salad

Ingredients
1 bunch kale, chopped (about 4 cups)2 tbsp sesame seeds, toasted2 tbsp sesame oil1 tbsp fresh ginger roots, grated2 tbsp apple cider vinegar1/8 tsp salt1/8 tsp pepper
Directions
Bring 4 cups of water to a boil, and prepare a bowl of ice water. Blanch the kale for about 30 seconds and place in ice water. Once cool, drain.

Mix remaining ingredients in a small bowl until well combined. Add to drained kale and toss to combine.

Serving Size: Makes 2 large lunch servings
