Hungarian goulash soup

1 stalk celery, chopped1 cup mushrooms, chopped1 small onion, chopped1 28 oz can crushed tomatoes2 beef stock cubes2 cups water1 tsp sugar1 tsp ground cumin1 tsp ground paprika125 grams uncooked pasta500 grams uncooked extra lean beef mince1 tsp olive oil
Heat a large non-stick frying pan over high heat. Dry-fry the mince until browned. Add the onions, celery and mushroom with olive oil and cook, stirring for 5 minutes.
Reduce the heat to low and add the paprika and cumin. Cook for 1 minute, add the tomatoes, stock, sugar and pasta. Cover and simmer for 25 minutes stirring occasionally.
Stir in chopped parsley (optional) and season to taste with salt and pepper. Serve, piping hot, laddled into warm soup bowls.
