Pumpkin Pie Parfait

Ingredients
4 oz fat free cream cheese1 tbsp sugar1 C + 1 tbsp skim milk, divided8 oz lite whipped dessert topping, divided15 oz can of pumpkin2 (4 serving) pkg. sugar-free instant vanilla pudding1-1/2 tsp pumpkin pie spice
Directions
Beat together cream cheese, sugar and 1 T of milk until smooth. Fold in half of the whipped topping and then spoon evenly into parfait glasses.

In a separate bowl combine pumpkin, pudding mixes, 1 C of milk and pumpkin pie spice. Spoon pumpkin mixture on top of cream cheese mixture and refrigerate minimum of 4 hours or overnight.

Garnish with whipped topping and a pinch of spice. Serves 8.
