Ingredients
Directions
-1 32 oz carton of vegetarian broth-1 package, 27 oz, dried beans, I had some cranberry beans
---Rinse and drain beans and then cover with cold water about an inch or so above the beans. Soak over night. I went from about 3pm to about 7am.
---Drain and rinse the beans again. Cover with your broth, adding water as needed to cover about 1 inch about the beans. Bring to a boil and then reduce to a simmer until almost done. Mine took about 40-45 min.
---Let cool and either serve as is or season and mash in a skillet for refried beans. You can freeze these beans, too.
---Makes about 9 C or 18 servings of 1/2 C each.
---Enjoy!!
Serving Size: Makes 18 servings of 1/2 C each.
