Chicken Chimichangas

Ingredients
16 oz b/s chicken breast, boiled and shredded1 packet fajita seasoning16 oz fat free sour cream1 can reduced fat cream of chicken soup1 small block of Velvetta Mexican8 medium whole wheat reduced carb tortillas4 oz fat free evaporated milkShredded lettuce
Directions
Boil chicken til done. Shred and add fajita seasoning to chicken and cook on stovetop til almost dry. Meanwhile, cube Velvetta and add sour cream, evaporated milk and cream of chicken soup. Microwave til all ingredients are smooth. Add cumin and cayenne and mix well. In medium skillet, heat corn oil over medium heat. Place 4 tbsp chicken mixture inside tortillas and roll. Place in heated corn oil and roll them till all sides are golden. Place on cooling rack lined with paper towels. Cook all chimichangas in this manner till all are done. Serve with 2 tbsp cheese mixture and shredded lettuce to taste.
