Simple Grexican Hummus

1 red bell pepper, cut into 1" squares2-3 cloves garlic, halved1 jalapeno pepper, quartered 1 tsp. olive oilFresh ground pepper to tasteSea salt to taste (optional)1 can chickpeas, no salt added1 tsp. ground cumin1/8 tsp. chipotle chile powder1/2 tsp. each, dried parsley and dried cilantro1/4 tsp. dried oreganocrushed red pepper flakes to taste (optional)1 tsp. water (you can use lemon or lime juice, too)
Stir together first 6 ingredients. Wrap in a double layer of foil. Cook on grill on medium heat for about 10 minutes. Increase heat to high and grill foil packet for 5 minutes on each side.
Carefully unwrap (Use grilling tongs so you don't get burned) the packet; transfer pepper mixture to food processor. Add remaining ingredients and pulse until well-mixed, making it chunky or smooth as you see fit.
Serve warm or cold with veggies for dipping.
