Brown Sugar Seared Salmon Filet

2 - 3 oz filets of salmon1 Tbsp brown sugarsalt and pepper to taste
Divide the brown sugar between the two filets, covering all sides.
Rub the sugar into the filets.
Sprinkle the filets with salt and pepper to taste.*
Allow the filets to rest for 15 minutes so that the sugar can melt onto the salmon.
Preheat a non-stick skillet over low heat. You can
use a non-stick spray if you need to.
Gently sear the fillets. Becareful to let the sugar carmalize and not burn. The fillets will turn a lovely golden brown when done. It will only take a couple of minutes on each side
