5 Cups lentils3 Quarts Water1 Large onion chopped3/4 leek chopped2 tbsp extra virgin olive oil1 green bell pepper1 tsp celtic salt1 tsp cumin1 cup freshly chopped cilantro5 Garlic cloves minced1/2 cup fresh lime juice
put the lentils and water in a large sauce pan on high heat and bring to a boil reduce the heat and let simmer while preparing other food. use half the olive oil and saute onion on medium heat for 8 minutes than add the bell pepper and leek for another two minutes add the onion mixture to the lentils simmer for 30 minutes season accordingly and simmer for 20 more minutes add the cilantro and remove from heat combine the garlic lime juice and remaining olive oil in a blender or food processor blend well mix in to the soup and serve
