Nutty Tofu Noodles

Ingredients
1 brick of firm tofu, cubed1/4 cup peanut butter 1/4 cup soy sauce2 TBS rice vinegar1/2 lb/8oz whole grain pasta1 head/bunch of broccoli, choppedpeanuts for garnish, if desired
Directions
bake cubed tofu on parchment-lined baking sheet for 10 minutes @ 425 degrees
whisk together peanut butter, soy sauce and rice vinegar
cook pasta according to box instructions
add broccoli to water 5 minutes before pasta is done cooking
drain and toss with tofu and sauce
garnish with peanuts, if desired (but not included in calories counted for this recipe!!0
