Mediterranean Tuna Noodle Casserole

Ingredients
1 TBS Olive Oilcoarse salt and ground pepper8 oz. bow-tie pasta1 red bell pepper thinly sliced1/4 cup flour2.5 cups whole milk2 6 oz. cans of tuna, drained1 cup artichoke hearts, thinly sliced3 scallions, thinly sliced6 basil leaves, thinly sliced1/4 cup finely grated Parmesan1/4 tsp ground Oregano1/2 cup kalamata olives sliced1/4 cup sundried tomatoes diced and rehydrated
Directions
1. Preheat oven to 400 degrees.Lightly oil 2 qt or 8-inch square baking dish. In a large pot of boiling salted water, cook noodles until 2 minutes short of al dente, drain and return to pot.

2. In large sauce pot, heat oil over medium. Add bell peppers, season with salt, pepper and oregano. Cook until crisp-tender, 4-6 minutes. Add flour and cook, stirring, 1 minute. Gradually ad milk, stirring until smooth. Cook, stirring occasionally, until mixture comes to simmer.

3. Remove from heat. Add mixture to noodles in pot, along with tuna, artichoke hearts, scallions, basil, olives, and tomatoes. Add salt and pepper if needed. Toss. Pour into baking dish. Sprinkle with Parmesan. Bake until golden and bubbling, about 20 minutes.
