600gms of organic chicken breast (cubed)2 large red onions (diced)1 large zuccinis (diced)3 medium carrots (diced)4 sticks of celery (diced)5 cloves of garlic (minced)1 teaspoon of dried rosemary1 teaspoon of thyme250gms of frozen chopped spinach1 cup of uncooked risoni pasta1 litre of vegetable stock
place all the ingredients in a large soup pot with enough water to cover. bring to boil and simmer for 30 mins.
